Everyone, thank you for your hard work. It’s been about two weeks since I returned to Japan, and time seems to have flown by quickly. Property hunting in Japan is still proving to be challenging. I had plans to go for the second property viewing as soon as I returned, but it seems I’m back to square one. I’m starting to consider different strategies now.
Now, let’s talk about my second expedition to New York. I’d like to share about an event with a dashi shop called ‘Dashi Okume’ in Brooklyn, New York. The shop originated from a long-standing store in Japan and has expanded to several locations, offering custom-made dashi packs. You can combine your preferred kombu, bonito flakes, dried fish, etc. There’s a shop like that in New York too.
During the initial meeting, I had the opportunity to taste their products, and they were amazing. It was enjoyable to brainstorm menu ideas. Good ingredients really excite me. Especially the freshly shaved katsuobushi was incredibly flavorful on its own, and the aroma was exceptional. Also, their dashi soy sauce was intriguing. It contains various ingredients such as bonito flakes, kombu, dried shiitake mushrooms, and dried scallops in the bottle. By adding soy sauce yourself, it transforms into the finest seasoning in about a week. I was truly amazed.

This is made by marinating botan shrimp using that dashi soy sauce.
There were many of them, so it was tough, but I think the shrimp’s rich sweetness and umami matched well with the dashi soy sauce and turned out delicious.

Since it was April, I used plenty of beans. I made the dashi a bit strong, hoping that even American people could feel the taste of dashi even a little.

It’s been a partial introduction to some dishes, but we were able to serve a combination of five appetizers. It was challenging to prepare alone, but it was also a good experience.
It was truly an honor to work with Okume this time. I’m always happy to receive such offers. I would be delighted to cooperate again in the future.
Next time, maybe a visit to the United States around autumn…
